01 - 1 large ripe pineapple
02 - 1 ripe mango, peeled and diced
03 - 1 cup seedless watermelon, diced
04 - 1 kiwi, peeled and sliced
05 - 1/2 cup strawberries, hulled and sliced
06 - 1/2 cup blueberries
→ Dressing
07 - Juice of 1 lime
08 - 1 tbsp honey or agave syrup (optional)
→ Garnish
09 - 2 tbsp shredded coconut (unsweetened or sweetened)
10 - Fresh mint leaves
# Steps:
01 - Slice the pineapple in half lengthwise, retaining the leafy crown for presentation.
02 - Carefully cut around the edges of each pineapple half and scoop out the flesh, leaving a 1/2-inch thick shell to form boats. Dice the removed pineapple, discarding the tough core.
03 - In a large mixing bowl, combine diced pineapple, mango, watermelon, kiwi, strawberries, and blueberries.
04 - Whisk lime juice and honey or agave syrup (if using) in a small bowl until combined.
05 - Drizzle the dressing over the mixed fruit and toss gently to coat evenly.
06 - Spoon the dressed fruit mixture evenly into the prepared pineapple shells.
07 - Sprinkle shredded coconut over the filled pineapple boats and garnish with fresh mint leaves. Serve immediately, chilled if preferred.
